Veggie Scrambled Eggs/With Basil

Invite Friends Over for Brunch with this African-Inspired Veggie Omelet with Basil 

Tip: Lazy weekends are the best times to invite friends over for brunch. This easy-to-prepare African-inspired style brunch will have your friends impressed and oohing for days.


  • ·         8 eggs
  • ·         1 (5 ounce) can evaporated milk
  • ·         2 tablespoons butter
  • ·         magi cube to taste
  • ·         black pepper to taste
  • ·         ¼ cup sliced green peppers
  • ·         ¼ cup chopped yellow onions
  • ·         ¼ cup sliced tomatoes
  • ·         I tablespoon minced fresh basil

 

Directions

In a bowl, whisk the eggs and milk until combined and fluffy. In a skillet, heat butter until melted. Add green peppers, yellow onions and tomatoes to skillet and stir until tender. Add egg mixture; season with magi cube and black pepper; cook and stir over medium-low heat until eggs are completely set. Pour eggs onto serving plate and sprinkle with fresh basil. Serve with toasted butter bread and sausages.
